Ripe ones–cut like a flower,

Dried ones–dessicated in sugar water;
Green ones–sliced up and eaten with fish paste and rice;

Wow Grace, hope you’ve recuperated. I have yet to try all the various ways of eating them. You seem to know the mango well. And there are so many varieties. One of my favorites is a smaller yellow one they call ‘champagne mango’ from Mexico. Oops, the juice is running down my wrists 🙂
