This is the last of the seasonal game for now…

Mixed Game Casserole with Blueberries & mashed Root Vegetables

Mixed Game Casserole with Blueberries
500g mixed game; oil; 4 shallots; 1 clove garlic; 1 stick celery; 1 carrot; ¼ swede; 4 juniper berries; 2 bay leaves; 1 tbsp fresh thyme; 1 glass red wine; 1 cup stock; seasoning; 50g blueberries; pinch sugar; cornflour to thicken.

Brown the meat and set aside. Sweat the shallots, add the garlic, fry 1 minute on high then add the chopped root vegetables, herbs and juniper and fry 2-3 minutes on gentle heat. Add the wine and reduce by ½ then stir in the meat and stock. Simmer 1-1.5h until the meat is tender. Adjust seasoning and stir in the cornflour and blueberries. Adjust acidity with a little sugar, if required.

Root Mash
500g each potato and celeriac; 100ml crème fraîche; 25g butter; pinch nutmeg; salt & white pepper

Boil & mash. A medium Bramley apple can be added or the celeriac can be substituted for swede (good with a bit of orange zest), or else experiment!

Serve with red cabbage or winter greens. Young sprouts are very fine too, but John won’t eat them.
