Now that was a party. In 7 years living in Mexico, I’d never been to the main event in Mexico City’s Zocalo. Hundreds of thousands of people, fireworks, music, and foam. Lots and lots of foam. Seems the custom is buy a can of that fake snow foam and let rip on any and everyone. We obliged the tradition by buying some 80 cans.

Mexican Food Part 8 – Chicken Tinga Tostadas

Chicken Tinga Tostadas

As I’ll be entertaining guests this evening with some delicious Mexican fare, I thought I’d share a little how-to cooking blog entry with you, with one of my favorite Mexican dishes called chicken tinga tostadas.

To save a little time, I’ll use the recipe I found online at AllRecipes.

First, I’m off to the neighbourhood market to purchase the ingredients:

Mexican Market

INGREDIENTS

  • 6 bone-in chicken breast halves
  • 7 medium onions, thinly sliced
  • 1 clove garlic, chopped
  • 1/4 cup vegetable oil
  • 6 medium tomatoes
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 1 tablespoon chicken bouillon granules
  • 16 tostada shells
  • 1 cup sour cream
  • salt and pepper to taste

Teacher in Space

Teacher in Space

NASA astronaut Barbara Morgan, originally a back-up to Christa McAuliffe (who lost her life in the Challenger disaster of 1986), fulfilled a two-decade promise to put a teacher in space and link up with students on earth.

From the ISS, she spoke to an audience of hundreds of yougsters packed into the Discovery Center of Idaho in Boise, US, less than 160km (100 miles) from the elementary school where Morgan taught before joining the astronaut corps.

Asked by one child how being a teacher compared to being an astronaut, Ms Morgan replied: “Astronauts and teachers actually do the same thing.

Buffalo, Lions, and Crocs, Oh My

In short, 4 lions snatch a buffalo calf.  A croc battles the lions but withdraws.  An army of buffalo assemble and rescue the calf, chasing away the lions.

Lorne Greene would’ve loved this scene of nature at its most ferocious.

Appreciating Spanish

As an English speaker, learning a new language can be both a difficult and enlightening experience. So tied up in culture is language that it is next to impossible to arm-chair learn the language of a foreign land…a foreign people.

I count myself lucky to have learned Spanish – but not so much for having learned the language but the culture of the language. Mexican in my case, but it makes the Spanish of other countries that much more accessible.

So, I’d thought I’d share some Spanish language song lyrics with you all, by Manu Chao, who himself speaks at least three languages.  I leave you Spanish language learners to translate or appreciate the depth of the language.

Hurricane Season

We saw a very light hurricane season in 2006…a welcome respite after Katrina, Stan, and Wilma brought havoc to New Orleans, Cancun, and Chiapas.

However, hurricane forecasters are predicting a very active 2007 season, with warmer than normal Atlantic and Caribbean waters contributing to an estimated 17 named storms.
